What is "oil canning"?

According to AEP Span:

All flat metal surfaces can display waviness commonly referred to as "oil canning." Oil canning is an inherent characteristic of all metal products and is not considered a defect. A flat panel will tend to oil can more than a profile panel with striations or ribbing. For more info, check out our technical bulletin.
